cheeseburger biscuit casserole

First thing let me just say tablespoon.com is awesome and they have great recipes!

This is from that website.

Ingredients:

1 lb lean (at least 80%) ground beef

1/4 cup chopped onion (1/2 medium)
1/4 cup chopped green bell pepper
1 can (8 oz) tomato sauce
1/4 cup ketchup
1/8 teaspoon pepper
8 slices (3/4 oz each) American cheese
1 can (7.5 oz) Pillsbury® Country® refrigerated biscuits


Heat oven to 400°F.
In 12-inch nonstick skillet, cook beef, onion and bell pepper over medium-high heat, stirring frequently, until beef is thoroughly cooked; drain.
Stir in tomato sauce, ketchup and pepper.
Reduce heat to low.
Simmer uncovered 5 minutes, stirring occasionally.
Spoon 1/3 of beef mixture into ungreased 2-quart casserole.
Top with 4 slices of the cheese. Repeat layers.
Top with remaining beef mixture, spreading to edge of casserole.
Separate dough into 10 biscuits.
Arrange biscuits in single layer around edge of hot mixture in casserole.
Bake 13 to 17 minutes or until biscuits are golden brown.



It was delicious I used pasta sauce instead of tomato sauce and bisquik biscuits instead of pilsbury!

Really easy tortellini soup

1 box dried, frozen, fresh(refrigerated) tortellini
1 quart chicken stock
1 handful spinach leaves
lemon zest

1. Bring stock to a boil
2. Add tortellini, cook according to box instructions
    If using fresh tortellini just heat thorough
3. Add spinach, allow to wilt 1-2 min
4. Stir in lemon zest
5. Eat!

Slow Cooker French Onion Soup

This one is a favorite of all of my friends! Freezes well too!

3 tbsp EVOO
3 large onions, sliced
3 (14 oz) cans of beef broth
1 tsp Worcestershire sauce
1/2 cup dry white wine (optional)
bread
grated gruyere, parmesan, or swiss cheese


  • Cook onions and EVOO in a large skillet for about 15 min. until soft and very light brown.
  • Put onions, beef broth, wine, and Worcestershire sauce in slow cooker.
  • Cook on low for 4-4 1/2 hours
  • Serve shredded cheese and bread on the side
